Abstract
The complex winepress exposed at Horbat Siv offers a good opportunity for a reevaluation of the wine production process. In this article, a new approach is discussed concerning the function of the various components of the installation. The hypothesis presented here considers two main facts pertaining to wine production: (1) all winepresses operated in accordance with the gravitation principle; (2) wine is extracted naturally, i.e., biochemically.
