Abstract

The remains uncovered at Yavne attest to its role in the wine-industry during the Byzantine period: viticulture, wine processing and trade of prestige Gaza and Ashqelon wine. The climate in this area, its soil and environment were ideal for growing vines (terroir). This article examines the wine industry along the southern coast of Israel, followed by a discussion of the literary sources mentioning this industry, the types of facilities used in it and the material findings. We focus on the industrial winepresses recently uncovered at Yavne and the extent of wine production at the site. Furthermore, the pottery kilns uncovered at Yavne, and the Gaza jars produced within them, will be elaborated on to reconstruct the scope of production. The location of Yavne on the southern coast of Israel, and its centrality in the wine industry, are discussed, emphasizing the special characteristics of the winepresses, pottery kilns and estates where Gaza and Ashqelon wine was produced.
